1 kg Saaremaa pork loin
450 g frozen red currants
5 g coriander seeds
100 g honey
50 g cooking oil
20 g balsamic vinegar
salt and pepper
Put all the ingredients in a saucepan and mix until smooth. Boil the mixture on a low heat until reduced by 1/3. Strain the mixture through a sieve and spread on the meat. Cook the meat at 170 degrees for an hour. Serve with roasted vegetables.
