INGREDIENTS
Beef tenderloin, 150 g per person
1 egg yolk
2 finely chopped shallots
5 tbsp capers
10 mini cucumbers
parsley
mustard
Worcester sauce
tabasco sauce
salt and black pepper
PREPARATION
There are 3 ways to carve up meat – chop with a knife, use a mincer, or best of all – on the fillet surface, pull along the meat grain with a sharp knife. Once the meat has been chopped, shape it into loaves of the desired size. Press a cavity into the top of each loaf, where you will place an egg yolk. Put the loaf on a plate and place different chopped greens and pickled vegetables around it, so everyone can make themselves a tartare to suit their taste. Serve with toast.
